Did your weekend include lots of football watching like mine did? Things started out so well, but then turned in to a sad day for Husker fans like us. Just look at Baby Brother… Yah, that pretty much sums up how our household (and the rest of the “Husker Nation”) felt on Saturday night. So, since the game itself isn’t worthy of talking about any further, I’ll share with you something that was awesome about our “homegating” game time this weekend…

Slow cooker Coca-Cola BBQ Pulled Pork Sliders with sauteed onions & apples!!!

Seriously, these sliders are perfect tailgating food. They are absolutely delicious, easy to make, and the addition of the apples make them perfect for fall!

Here’s how to make them:

You’ll start with your crock pot, 3-5 pounds of your choice cut of pork (I had 4+ pounds of pork shoulder country style ribs), about 12oz. of Coca-Cola, and 1C of your favorite BBQ sauce. Dump it all in your crock pot and cook until fork tender. I cooked mine on high for about 5 hours and it literally just fell apart to the touch. Using a slotted spoon, I scooped out the meat into a pan & shredded the pork with a fork (hey, we’re rhyming now! 😉 ) The meat was delicious on its own, so you could totally just stop here. But, I wanted to spruce things up a bit! So, I added sauteed sweet onions & apples. To do this, just thinly slice (about a 1/4 inch think or less) some sweet onion and a crisp apple (Granny Smith works best for a nice, tart & crisp addition). In a pan with a bit of butter & olive oil, start sauteing the onions first. Once those are just about done, throw your apples in–just for a minute or two. You don’t want mushy apples!  Then, set everything out for slider building. The key thing here are the KING’S HAWAIIAN® mini sub rolls (or original rolls). They add just the right amount of sweet!
