Homemade Peach Jam Sauce

Yum! There is just something about summertime and fresh peaches! We’ve been finding some really great deals at our local grocery stores on peaches in the last two weeks–and some of the peaches have actually been sooooooo good that you wouldn’t even know they weren’t fresh off a tree. So, we loaded up on quite a few pounds & I made a few things. The smell was incredible!

First up, I wanted to make some sort of peach sauce or jam. I didn’t want to mess with canning or even freezer jam, so I whipped some up much like the  homemade strawberry sauce I make. It turned out soooooo good! Too runny to be truly a jam, but not nearly as runny as a true syrup, so I called it…

Peach Jam Sauce

(yield: 6 cups)

Ingredients:

– 9 ripe peaches

– 3/4 C sugar

– 2T lemon juice

– 1t corn starch mixed with water

Directions:

1. Peel & pit the peaches. You can use the blanching method in boiling water, or just peel them with a peeler or knife (that’s what I did). Then, cut them up into small pieces.

2. In a large pot on medium-low heat, add the lemon juice & all the peach pieces. Mash & stir the peaches until most large chunks are gone.

3. Add sugar & let dissolve.

4. Cook on high (boiling) for about 5 minutes, stirring continuously,

5. Remove from heat.

6. Mix corn starch in a bowl with just enough water to cover the starch. Stir into the peaches. Let cool & then eat!!

Seriously, this is delicious and has so many uses–on top of pancakes, waffles, toast or ice cream! Mix with ice cream & milk for your own fresh peach milk shake. Mix in to plain yogurt for your own healthier “fruit on the bottom” variety. Or, just dive in with a spoon! 😉
