Super Easy & Delicious Meal: Lemon Pepper Chicken & Veggies {Maternity Leave Guest post}

Good com­pany, I know. All baby com­pany is good com­pany. Try­ing to enter­tain while wel­com­ing a new baby isn’t easy, though.

I’m Becca from Our Crazy Boys and though I don’t know about hav­ing three boys, like the amaz­ing Sara, I do know about wel­com­ing two boys into the fam­ily and the (good) stresses that could come with it.

When I was think­ing about a guest post for Sara, I wanted some­thing that would help take some of the stress out of enter­tain­ing at this busy time — what bet­ter way to help than an easy recipe that makes peo­ple say “wow!” every time they eat it?

Lemon Chicken, Gar­lic Green Beans, and Grilled Veggies

Prep time: 10 min­utes Cook time: 20 minutes

Lemon Chicken – 2 ingredients

Lemon pep­per sea­son­ing is the only ingre­di­ent here besides the chicken. For home­made sea­son­ing, zest one lemon per chicken breast and add 1t ground pep­per and 1/4 t salt. Per­son­ally, my favorite lemon pep­per is the one I order from Santa Cruz Chili Com­pany; Lemon Pep­per with salt.

I put the chicken and sea­son­ing in a Ziploc bag in the refrig­er­a­tor about an hour before we grill it, but it’s also ok to sea­son it in the morn­ing or right before you grill.

Gar­lic Green Beans – 3 ingredients

 Green beans

4T But­ter

2–3 cloves of gar­lic per ½ pound of green beans

In a deep sided pan, sauté green beans with gar­lic and but­ter on low for 10–15 minutes.

Grilled Veg­gies – One ingre­di­ent in addi­tion to your veggies.

Our favorite veg­gies to slice up are orange and yel­low pep­pers, onions, and mush­rooms. Toss in some olive oil and throw them in a grill bas­ket for 15–20 min­utes on medium tem­per­a­ture, toss­ing every 5 min­utes or so.

Of course, if you pre­fer to bake your chicken and sauté all of your veg­gies, I bet the meal would have the same effect. The fla­vors go well together and the short list of ingre­di­ents makes it an easy meal to pre­pare when you’re short on time.

I hope this recipe helps you out in a pinch or leads to some recipe cre­at­ing of your own. I think my yum­mi­est recipes come from swap­ping ingre­di­ents when I run out of something!
