Sweet Summer Chicken Salad {Maternity Leave Guest Post}

…a fresh recipe per­fect for those hot sum­mer nights: Sweet Sum­mer Chicken Salad!

After find­ing some bone­less, skin­less chicken breast, I also gath­ered up var­i­ous other ingre­di­ents for the per­fect salad: sliced almonds, sun­flower seeds, dried cran­ber­ries, apples, and mild ched­dar chunk cheese.

Chop the let­tuce as you wish. We pre­fer Romaine cut into thin strips, but you can choose what suits your fancy.

Slice the block of ched­dar in half and shred it. I liked to think as I was doing this that I was get­ting an arm work­out along with my healthy meal.

I used an apple/slicer/corer to cut the apples and then cut each slice into smaller chunks.

I’m not the best with a grill. Actu­ally, I’ve never really tried to grill, but I’m pretty sure my hus­band has the mar­ket cor­nered on grilling in our home. While I was prepar­ing the rest of the ingre­di­ents, he han­dled the grilling of the chicken.

He does a pretty good job, don’t you think? When the chicken is done being cooked, cut thin slices and lay it on top of the pre­pared salad.

Voila! A quick, easy, yummy salad that has health and taste all com­bined in one yummy plate. Enjoy!
