Hi Mom Endeavors readers! I’m Shannon, and I blog over at Madigan Made. Sara invited me to share a recipe with you today so that she can spend some quality time with her new little man. I am more than happy to help out. I can’t send her a real casserole… but I can send her this recipe to show y’all!

I thought I would share one of my husband’s favorite dinner recipes, a sausage and peppers sandwich. It is soo good!

Our tastes lean towards spicy, so we prefer using hot, Italian sausage… but you can use sweet sausage instead. The meat and veggie sauce alone is fantastic and would also be very good served with a side of pasta. But we prefer to make a big sub sandwich out of it instead by using really good, Italian, long rolls.

And who doesn’t like hearty sandwich? 🙂

Sausage and Peppers Sandwich Recipe:

Adapted from this recipe on Allrecipes

Ingredients:

  • 8 (4 ounce) links Italian sausage
  • 2 tablespoons butter
  • 1 14 oz. can of diced tomatoes, lightly drained
  • 1 yellow onion, sliced
  • 1/2 red onion, sliced
  • 4 cloves garlic, minced
  • 1 large red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Salt and pepper, to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 to 1/2 cup beer or wine  (broth or water could be substituted, too)
  • 8-12 slices of provolone cheese
  • 6-8 long rolls

Instructions:

Brown: Heat up a large, deep skillet on medium heat. Brown the sausage on all sides and then remove it from the pan and set aside. Cut each link in half.

Sauté; Drain excess grease from the pan. Melt the butter in the remaining sausage drippings and sauté all of the onions for several minutes. Add the peppers and garlic and continue to cook for a few more minutes. Add the seasoning, spices, tomatoes and 1/4 cup beer. Stir and cook until veggies are tender.

Simmer: Add the sausage back to the pot and simmer the mixture, covered, for 15-30 minutes. Stir occasionally and add more liquid /beer if needed as the sauce starts to reduce.

Serve: Cut the rolls lengthwise and add a layer of cheese in each one. Fill the bread with sausage and top with some of the veggie mixture. Enjoy!

Serves 6-8. (Depending on the size of the rolls and how big you like your sandwich!)

This sausage and peppers recipe is so simple to make… and if you are lucky enough to have leftovers, it is even better the next day. Yum!

In fact, except for the rolls, this recipe does ‘keep’ really well. These sausage and peppers would be a fabulous idea to bring to someone you know that needed easy meals to reheat. (Like someone who just had a baby? ;D )

I love sharing simple recipes like this one with my readers. And I’d love it if you wanted to stop by Madigan Made some time. Y’all have an open invite! 🙂
