Living in the Phoenix area, there is no shortage of great Mexican food. And, with Cinco de Mayo this weekend, you can bet there will be copious amount consumed. Our house will be no exception!   1. YUMMY, I like mexican food. I often make enchilladas for company (it makes a BIG batch!) Although I am not crazy about avacados or refried beans! LOL.

  2. Mmmm! Those look so good! I just made black bean soup in the spirit of Cinco de Mayo. Surprised how easy it is. I’ll have to try some of these too! Thanks for the recipes.
